A cluster of Perricone on the fermenting must, with the flow from the steel tank.

Vallée d'Olmè

Vallée d'Olmè is the French name of Valledolmo. Two single-varietal wines that capture in the glass the altitude of the Madonie, the sharp temperature swings and the pure mountain breezes.

Vallée d'Olmè Bianco Terre Siciliane IGT · 2024 vintage

Straw yellow with greenish reflections. On the nose it opens on citrus, flint and delicate floral notes; on the palate it is soft and fresh, with good salinity and fairly persistent. It is the limpid minerality of the mountain, captured in Catarratto, the white grape that is a symbol of Sicily.

Where they shine

Scroll for a few pairing ideas: our wines love honest, regional cooking.

01

White · Aperitivo

To begin

Fresh, savoury Catarratto with olives, toasted almonds and fresh cheeses: the ideal opener.

02

White · Sea

Fish & crudités

Sea-urchin spaghetti, oily fish, light frying: high-altitude minerality cleanses and lifts.

03

Red · Land

Traditional firsts

Pasta with sardines, white ragù, caponata: Perricone embraces bold flavours without covering them.

04

Red · Grill

Meats & cheeses

Grilled sausage, lamb, aged pecorino: tannin and fruit hold their own.

05

Serving

At the right temperature

White 10–12 °C, Red 16–18 °C. A wide glass and time to breathe do the rest.

06

In the cellar

Steel and oak

Steel for freshness, French oak barriques for the red: balance, never excess.
